Rhubarb Jam
When I was a child, my granny used to make great fruit jams. One of my favorite was the Rhubarb Jam that she made every spring year after year. It will always be a mystery for me, how she made such heavenly smooth and tasty old fashioned jam, that I love so much. Some things are mentioned to remind us of our past, and my granny’s Rhubarb Jam will be one of mine.
Great Rhubarb Pie
When I was little, my granny used to grow her own rhubarb in her garden and made the best rhubarb pie ever. Even know I still remember what great pies she made.
Rhubarb on its own has a tangy and sharp taste. It is usually used in sweet dishes accompanied with sugar to sweeten it up. When combined with sweet tasting fruits such as strawberries, apples or oranges, the flavour of the rhubarb is enhanced and softened, giving a delicious combination of sweet and sharp that taste.
So simple…so easy!
Coconut Cookies
This is a wonderful Coconut Cookies recipe. I haven’t taste cookies so delicious.
- 1 1/4 all purpose flour
- 1 tsp baking powder
- 1 tsp soda
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup butter (or margarine)
- 1 egg
- 1 tsp vanilla
- 1 cup uncooked oats
- 1 cup flaked or shredded coconut
Place flour, baking powder, soda and salt into a bowl a mix together. Add sugar, brown sugar, butter, egg and vanilla and beat until smoot. Stir in oats and coconut.
Shape to form 1-inch cookies and place them on greased cooking sheets. Bake in preheated oven (180 degrees) for 12 – 15 minutes. Remove from oven and allow cool.
